Guam – Following up on a complaint, Department of Public Health and Social Services inspected Dededo Martinez Kitchenette, and the discovery of an active cockroach infestation forced the immediate closure of the restaurant.

A total of 70 violations were recorded, among the most serious, an employee was observed handling food with an openly bleeding wound, with no use of a glove.

Raw meat products were improperly thawing in buckets on the floor and frozen products were being stored in temperatures above the accepted level.

The restaurant was further found to have violated numerous sanitizing requirements. No hot water or hand towels were provided at the hand washing station, and wiping cloths were being stored in containers with no sanitizing solution.

The restaurant will remain closed until corrective actions are taken and a request for re-inspection is made to the department.
